Star Blues Jam

In Hawai’i we are fortunate to have tons of star fruit. When a tree is dropping it’s so much, people usually don’t know what to do with it. It’s great to slice and use in salads. Ones that are more ripe are great to eat just as a fruit. What do you do with the rest? If you don’t have star fruit, you can substitute the starfruit for apricot (fresh or dried) or any other fruit you desire. The trick is the blueberries or other berries that have pectin to thicken whatever combo of fruit you use into a delicious jam.

Wash and slice your star fruit (or other fruit).

Add blueberries and other berries if available like some cranraisins.

Place in a pot.

Add a generous amount of sugar and a squirt of lemon.

Add exotica options if you like, such as molasses, honey, cardamom, cinnamon, ginger, all spice, nutmeg, and/or cloves.

Boil, then simmer until thick or reaches 220 degrees.

Use it as a jam. Place a teaspoon in hot water for tea. Add over ice cream. If you make your own ice cream, add it like a ripple when you place it in your container for the freezer. If you make cupcakes, pour half batter into the cups, add a drop of this in the middle, cover with batter, and bake.
